ah, that I can't help you, from a user's point of view I just like my baked potato nice and big, soft and moist.

You can't go wrong with USA Russet Burbank potatoes for baked potatoes

It won't be sweet though. Sweet Variants you have to go with Sweet Potatoes

actually cheese isn't that good on potato. I mean it tastes nice, but it's more the cheese that the potato i think.

absolutely no clue since i don't take dairy products. i made baked potatoes for NYE - guests can choose between either (or both these fillings): chicken bolognese with onions/garlic or mushroom/leek/onion combos.

Actually why don't you make mashed sweet potato flavoured with a bit of butter

It taste really great too and these days a lot of chefs are shifting towards making mashed sweet potato instead of potato because of the better flavour profile of the sweet potato

It doesn't have to be baked does it???

I mean if there is going to be fillings, it is better to use a normal potato than sweet potato

Russet Burbank would be good

It's large enough and it has a very nice fluffy texture. Flavour is mild enough so that it does not change the taste of yr fillings
